To call potatoes, “popular” would be a dramatic understatement. Cultivated for thousands of years, potatoes are the most popular vegetable crop consumed in the world today. At Livonia Glatt Market, we love them and wanted to share some kosher potato recipes for you and your family.

More than a Pesach staple from your local kosher market, you can prepare potatoes using a wide variety of methods. Whether they’re baked, mashed, fried or roasted, potatoes are a genuine global comfort food.

NUTRITIONAL BENEFITS OF POTATOES
Many people associate potatoes with unhealthy foods, due to the popularity of French fries and chips. The truth is, potatoes are very nutritious, with no fat, cholesterol or sodium. But frying them in oil changes that.

Potatoes are an excellent source of Vitamin C, with levels up to 70% of the recommended daily allowances. Fun fact: Spanish explorers kept potatoes among their sailing provisions to help prevent scurvy.

Potatoes are also rich in several other vitamins, including B6, folate, thiamin, and niacin. We should note that most of the folate and antioxidants concentrate in the peel. For the greatest nutritional value, keep the peel on for most recipes.

Potassium levels in potatoes are twice that of bananas. Potassium can help reduce hypertension and heart disease. Potatoes also contain high levels of magnesium, manganese, copper and iron, and deserve their distinction as a healthy food.

The nutritional content of potatoes is only surpassed by their versatility. When cooking potatoes, the possibilities in preparation are limited only by your imagination. Cooking options include: boiling, roasting, baking, pan-frying, grilling, mashing, as well as deep-frying.
