Brush shucked ears of corn with oil and grill over medium-high heat, turning often and seasoning with salt. Mix together mayo and cumin, spread on each ear and roll in crumbled cotija cheese. Sprinkle with cilantro and don’t forget a squeeze of lime. Skip the cheese and mayo to make this a vegan dish. (Delish)

Grilled Ranch Potatoes - Forget the processed potato salad, grilled ranch potatoes are going to be your new favorite side dish, whether you’re a vegetarian or not. Cut potatoes into one-inch pieces, toss with olive oil and ranch seasoning. Thread onto skewers and grill over low heat for 10-20 minutes, turning throughout for even cooking. Grilled Artichokes - You’ll be the hit of any vegetarian BBQ with smoky grilled artichokes. Cut each artichoke in half vertically and trim the pointy ends off the leaves. Cut out the fuzzy choke in the center and discard. Rub all of the artichokes with lemon and steam until they are tender, or about 30 minutes. After cooling, spray with cooking spray, season with salt and pepper and grill cut side down until nicely charred. Serve with a tasty dipping sauce for a delicious vegetarian BBQ appetizer. (Delish)
